Nutty Cauliflower Cheese

This is such a delicious version of cauliflower cheese and it's really easy to make and not too unhealthy!

Serves 2

  • 1 Cauliflower 
  • 2/3 tub Creme Fraiche 
  • 50ml of Semi-Skimmed Milk 
  • 1 tsp Salted Butter 
  • 1 tsp Wholegrain Mustard 
  • 2 cloves of Garlic 
  • 50g Cheddar Cheese 
  • Handful of Brazil Nuts (about 6-8) 
  • 1 tsp Dried Mixed Herbs 
  • Black Pepper to season 

Takes 15minutes on the hob and 20minutes in a 180 degree oven (200 degree if not a fan oven)

  1. Chop the cauliflower into large florets and place in a pan of boiling water to cook for about 5minutes. Drain and set aside
  2. Finely chop the garlic. Heat the butter in a frying pan and add the garlic and cook for 30 seconds 
  3. Add the creme fraiche, wholegrain mustard, dried mixed herbs and black pepper and stir over a low heat until the creme fraiche begins to thin a little
  4. Add the milk and 2/3 of the cheddar cheese to the sauce and stir until the cheese has melted
  5. Place the brazil nuts in a blender and blitz until finely chopped
  6. Add the cooked cauliflower to the sauce and stir around until it's all coated 
  7. Place into an ovenproof dish and top with the remaining cheddar cheese and the chopped nuts and cook for around 20minutes until the top is lightly golden
